I have a fear.  I have always had it and I really don’t know where it manifested itself, but it is there none the less.  I am terrified that some evening I will come home alone to an empty, dark home with a burglar or villain of some sort waiting inside.  I know it is not something that I need to dwell on, so I just try to leave a lamp on if I am going out.  Silly, I know, but we all have our quirks.

For a year in college, my brother and I shared a duplex apartment.  It was a nice little place (much larger than my current apartment).  One night, I came home from a date with Jonathan and Chris wasn’t home yet.  So, I unlocked the door and headed in.  As I walked across the living room to my bedroom, I heard noise and bumping around in the bathroom beside my room.  I scurried in my room, quietly locked myself in,  and froze.  I listened as seconds passed and then more bumping around–like someone standing in the tub with shoes on.  I crawled terrified onto my bed and tried to calm down.

“I’m imagining things,” I thought.

Soon, more sounds came from next door and I knew I needed help.  I knew I had to be overreacting, so I called Jonathan.

“Jonathan,” I said to the voice on the other end, “I think someone might be in the house with me…can you come over?”

He got here really fast and knocked lightly on my bedroom door.

“Who is it?”

“It is me!”

I opened the door tenatively and pulled him in.  I closed the door behind him and made him stand very still and listen.  Sure enough.  The sounds were still there.  He opened the door and turned the corner.  I stood at my bedroom door waiting for him to tell me nothing was there.

Suddenly, he shouted! “Whoa!”, he said and turned back to me grinning.

“Stop it!!! That’s not funny!”, I told him.

“I’m serious,” he said, “there is a huge rat in there.”

He slammed the door and I began twitching all over.  You know that heeby-jeeby feeling you get when something you don’t care to come in contact with is nearby.  I decided to call the landlord.

When I told him there was a rat in the bathroom, he just sort of sat there before saying, “Did you need me to do something about it?”

Um, yeah!!  He came over soon and came in carrying a broom handle.  This was quite a sight.  He walked into the bathroom shouted and hurried back out and closed the door behind him.  He asked for a box and some paper towels.  He went back in and closed the door behind him.  I thought the walls might fall.  He was obviously chasing that thing all over the tiny room.  Finally, he emerged and pointed at the rat in a gesture that sounded in my mind like “there’s your problem”.

Let me just tell you it was huge!  It had a tail that was around a foot long, if you can imagine.  Not a cute rat either.  Nope, it was an ugly (now messy) thing.  He mopped the bathroom up and headed home promising a visit from the critter people the next day. They came and showed how an inch gap in drywall at the sink pipe had to be the entrance.

For a week, I could not shower or go to the bathroom alone.  Seriously!  My brother had to sit outside the door and talk to me every once in a while to show me he was still there.  It was very traumatic!  I feel I have healed from this experience, but I still bear a few scars that make me a little quirky (not that I needed much help).

I was visiting with some gals this weekend and conversation turned to snake experiences, and I shared about a snake that visited our apartment this summer.  I told about the way our cat had it pinned under some furniture (I was unaware of what she was watching) until I moved something under thefurniture and out it slithered.  Denyse asked what we did with it and I told her that Jonathan banged its head with a shoe and flushed it.  She laughed and said that should be a blog post.  I knew I didn’t remember many details about the exerience, but it brought to my mind this VERY memorable experience.

No, this is not me hinting for presents.  Although, I would never refuse such things.  :)   Actually, I was working on Micah’s birthday list and thought I would share with you something our family does.

As we began to get nephews and nieces, things got complicated.  We would often duplicate gifts or things they already had (it still happens sometimes).  The solution for our family was this website.  Each household has at least one list to look at for ideas.  It is understood that there is not an expectation of things only on the list.  It is merely a way to help the family get ideas for what the kids (young and old) might be wanting.

I try to keep mine and Micah’s list (we share) up to date.  My hubby is not so good at that…and, his list is more like Cubs World Series Tickets, an accordion, etc.  Kind of hard for folks to find a inexpensive idea. :)

Anyway, my sister-in-laws (or is it sisters-in-law) and I try to keep them up to date for the holiday and birthday seasons.   We just go to the site and find their list and get ideas.  They work for us!

I am still here…

When Jonathan’s site crashed, he had to revert back to before the crash in order to retrieve back his site.  That wasn’t too tragic since he hadn’t posted anything recently.  I share his site and hosting, so it took me back in time too.  I was able to retrieve my lost posts from a google reader and have them back up now, but the comments are gone.  Sorry!  Also gone is the re-design we were working on.  After things seem to settle down at his site, I will get back to work.  Until then, back to pink and such.  Thanks to my three readers for hanging around anyway!  :)   Teehee!

Update and a Recipe

Last night I found out that my website was a little “messed up”.  It seems that when my hubby had a crash he could not fix it and had to turn to the experts.  They reverted his site back to before the disaster.  That would be great except that my site is really just a branch of his site, so I am thrown back in time as well.  So, my re-design in progress is gone as well as several posts I had written lately.  Jonathan thinks we can restore the posts and redo our design work soon.  But in the meantime, I will pretend everything is normal! :)

So, how about a recipe?  I blog I read regularly had a post for easy peanut butter cookies.  I immediately thought she had my recipe because there isn’t anything easier.  Well, she didn’t.  Hers is much more detailed, so I thought I would share mine for those of you who need a super quick and easy treat.  These are too easy!  I always made them in college, so you know they had to be easy AND cheap!

Peanut Butter Cookies

1 cup peanut butter

1 egg

1 cup of sugar

Bake at 350 degrees for I don’t know how long!  Just watch I guess!  :)

When they come out of the oven, I like to stick a hershey’s kiss in the middle.  You could use any type of chocolate or no chocolate at all.  I would of course think you were weird if you chose no chocolate, but that’s just me.  You can double or triple the recipe pretty easily and no need to print up a recipe card.  I think you can remember this one!  Enjoy!

Happy Birthday Hubby!

Today is my dear husband’s birthday.  He is turning 3-0!  He doesn’t want a big fuss, but I am insisting on a drive to the next town for a nice steak dinner followed by DVD shopping at Best Buy.  We may need to go into Kohl’s as well to freshen up his wardrobe (only ever done on holidays and special occasions-he would rather not shop).  To make up for the shopping part, I have a nice strawberry cake waiting at home decorated in a Cubbies theme.  I love you, sweetheart.  You are OLD!

gDiapers

You can call this a product review if you want, but it’s really a change in mindset for me.  I have been using gDiapers since the first of June.  It was a decision I researched a lot before deciding  to make the switch.  You see, I was considering going to completely cloth diapers ( if not now, then by the next baby-not coming soon for those reading too much into this).  So, I thought I would try these diapers as a way to transition to cloth.  I have since decided to stick with these for Micah and then venture to cloth with any subsequent children in the Carpenter household.

My reasons for the switch? I know some might think I have lost my marbles.  All the modern conveniences of disposable diapers are not lost on me.  I get it.  But, I am not a big fan of the trade off.  I am not an environmental nut who has to over analyze every impact I make on the planet, but the diaper issue gave me pause.  I have learned in my research that the modern disposable diaper does not actually biodegrade until  500 years.  That is actually a projection seeing as they haven’t really been around for that long.  Point being, no disposables have actually biodegraded at this point.  Crazy!  To think of how many diapers are thrown out in one child’s diapering lifetime is staggering.  We have certainly added to that pile.

I decided to begin figuring out how tough the cloth diapering process would be.  My sister-in-law had recently switched for this reason and because of her son’s allergic reaction to chemicals in diapers.  I picked her brain on how she felt it was going and how it worked for them.  I read blogs, articles, product reviews, business pitches, etc. to get my brain around the idea.

Anyway, I decided to “try” things out by starting with gDiapers.  gDiapers are actually what I call hybrid diapers (maybe they call themselves that too).  They are a cross between disposable and cloth.  The actual diaper is cloth with a snap in “plastic” liner.  You slide in a disposable insert in the liner and your done.  When dirty, you can tear and flush, compost wet ones, or throw away.  We are throwing away right now.  Our apartment plumbing is not strong enough for flushing and composting would be out as well.  I don’t have to feel bad about tossing them because they biodegrade in up to 50 days.

Anyway, I have really enjoyed them.  They are just as easy as disposables.  The great thing about today’s cloth diapers is the fact that they are so much like today’s disposable.  They velcro on just as easily and fit just as well (when you have the right size).  I would probably make the jump straight to cloth if not for our current transition period.  Right now, this is working for us.  So there you have it.  I have not been a good product user until now.  I have kept this to myself to prevent the judgement of becoming too green or trying to be a supermom.  I’m justing figuring out this mothering thing on my own and fiding what works for me.  I am in no way a supermom (my son would rather eat pizza than any veggie) and as for going green…well, I am doing what seems doable for me.  I am not driving a a hybrid car, recycling my cans, etc.  See, I’m just being me.

One of my Favorite Things: Cookbooks

I really like cookbooks!  I can’t really explain this attraction I have to them.  I am not a great cook.  In fact, I don’t cook as often as a stay-at-home mommy should.  I tend to find other ways to fill my time (not too proud of that fact).  Anyway, I love getting out cookbooks some days and just flipping through looking for recipes to try.  I usually get those post-it flags and flag tons of pages.  I will plan out using that recipe in the next week.   Then, I usually forget.  SAD!

My cookbooks range from sophisticated (read: weird ingredients you can’t buy nearby) to downhome (read: 3 cans and some package, then bake).  My favorites tend to be church cookbooks and other ones compiled by people I know.  There is something comforting in knowing that so-and-so makes this and HER family eats it.  It becomes reliable and less risky to try.

A Preacher?!?

Recipe: Chicken Spectacular

A sweet family friend name MaryAnn gave Jonathan’s mom this recipe.  It has since become a regular at our house.  It is basically your whole meal rolled up in a casserole dish.  It’s the southern thing to do!

Chicken Spectacular

3 cups cooked chicken (I often shortcut by using that stuff in a can!)

1 pkg. Wild and White Rice (I use two packages of the already cooked long grain and wild Uncle Ben’s)

1 can Cream of Celery Soup

1 small jar diced pimentos (I leave these out when they are not in the pantry)

1 med. onion, chopped (or minced onion flakes…that is all I am allowed to use at my house)

2 cups french style green beans, drained (a can or two, depending on how far you want to stretch the recipe)

1 cup Mayonaise

1 cup water chestnuts (I leave those crunchy suckers out!)

salt and pepper

Mix all ingredients and pour into 2 and a half to 3 quart baking dish (9×13).  Bake at 350 degrees for 25-30 minutes.

This recipe is very forgiving.  You can tweak it according to what you have in the pantry, but it is very yummy!  Micah even likes it!
